saving summer

Canning, putting up preserves, and making relish

Dear Rebecca,

In the summer, gardeners and farmers often find ourselves with too much of a good thing. Piles of cucumbers, every windowsill lined with tomatoes, and last minute calls to relatives for your grandmother’s cobbler recipe.

This edition of the Stew is dedicated to saving the best flavors of summer. A guide to canning will help demystify the process and a recipe from April McGreger of Farmer’s Daughter will ensure that you can enjoy the tastes of summer all year long. We’ve also got great stories about a 125-year-old recipe for Jerusalem artichoke relish, the marvelous diversity of tomatoes, and the good work our friends do at GrowFood Carolina.

At CFSA, we are also working to grow the support and dollars we need to continue our mission to bring local, organic food to your table from a farmer you can trust – but we need your help. We invite you to join our Perennial Givers Guild. Your monthly donation of any amount will help us grow local & organic in the Carolinas from seed to plate.

Warmly,
